Australian Native version of peanut butter & jelly but much better for you because of the macadamia nuts. This combines wonderfully on the palate, an experience very hard to describe but one that is referred to as addictive by the people who buy it. Some people buy it instead of things like nutella or chocolate as a treat to be eaten on occasion.
Using your Mac Nut Butter Swirl:Great as a treat by the spoonful but don't get carried away and eat the whole jar! Great on crumpets or toast in the morning. Try spooned over pancakes or crepes for a delightful brunch or dessert. Some people also use it with meats.
Ingredients:Macadamia Nuts (45%), Davidsons Rainforest Plums (25%), cane sugar, citrus pectin, sea salt.

Egg Cups

Egg Cups!!
Butter a slice of bread on both sides lightly and place in a muffin or patty cake tin. crack an egg in the center and top with anything you like, we love sliced mushroom, cheese, bacon, chopped tomato ( in fact just about any veges go good with this!) cook in a moderate oven for about 5 to 10 min or until your egg is cooked, great hot or cold! the kids love to make these themselves and have them cold for morning tea but i cant resist eating mine when its hot!

Zucchini slice

Zucchini Slice
6 eggs
1 zucchini grated and patted dry with paper towel
2 grated carrots
1 cup of cheese

Whisk eggs in a bowl and add veges and cheese and combine gently.
Pour into a greased rectangle or square tin and bake in a moderate oven for about 10 minutes.
When cooked remove from tin, allow to cool and cut into slices!!

Bunya Burgers and Watson Bay

Bunya Burgers.
ingredients=
1 egg
1/2 cup plain flour
1 cup cooked red lentils
1 cup cooked veges
1 cup boiled and chopped Bunya nuts sprinkled with a pinch of herbs such as Native Mint or Native Pepper or Native Thyme or lemon Myrtle
breadcrumbs
2 teaspoons of curry powder if you dont have any native herbs.
Mash veges and nuts and lentils together until they form a lumpy mixture.
Add egg flour and curry powder.
Sprinkle in breadcrumbs until mixture forms into a solid ball.
Heat an oiled large flat pan to medium heat. Make small balls and flatten them out in the pan, cook on both sides untill golden brown!

I was just looking at some images on Google and i saw this beautiful photo of Coalcliffe Beach, its not far from where i live and when i was a teenager (Lol yeah way back when!) i got very drunk one night and had to sleep on this beach cause nobody was sober enough to drive! Its a beautiful photo so i just thought i'd share.
Bush Tucker Tip
Yam (Murnong), Taro and Bunya Nuts tossed in olive oil with Dorrigo Pepper and Native Thyme are ideal for roasting. All require long slow cooking.

Warrigal Pie

Ingredients
Oil spray
1/2 cup of bread crumbs
1 cup of evaporated skim milk
4 eggs
2 1/2 cups of blanched Warrigal Greens
1/2 cup of chopped shallots
1/2 cup of Parmesan cheese

Spray pie dish with oil spray. Spread breadcrumbs over the base of dish.

Beat eggs and milk together in a mixing bowl.

Add all other ingredients.
Pour into pie dish.
Bake in a moderate oven for 30-35 minutes.

Warrigal greens - blanch in boiling water for about 2 - 3 minutes.
