Bush Tucker

Akudjera (Bush Tomato)
These yellow berries are the fruit from a small bush that grows in the desert areas of NSW. The berries look like small tomatoes, and are harvested once they have been slightly sundried on the bush, Bush Tomatoes taste similar to a slightly bitter sun dried tomato, and can be used in a similar fashion to sun dried tomatoes, enhancing the flavour of tomato based dishes.

Warrigal Greens
A great substitute for spinach, Warrigal greens area herb with arrow shaped leaves, common in coastal regions of NSW. Warrigal Greens need to be blanched lightly before use. if you choose young light green leaves this isnt as necesarry. Greens may be blanched and then sauteed in olive oil with a pinch each of Nutmeg, Native Pepper and Lemon Myrtle until the leaves wilt and change colour before adding to recipes.

Bunya Nuts
These nuts may be eaten raw when fresh, or boiled to make it easier to exrtact the nut from the hardshell. The nuts can then be sliced or pureed and added to deserts and savoury dishes. The flour can also be .used to make breads and cakes. Flavours that combine well with Bunya Nuts include Native Peppers, Native Mint, Native Thyme and Lemon Myrtle

Kutjera - looks like a raisin, is rich in vitamin C and tastes like strong caramel .

Muntries - also known as emu apples or native cranberries. These taste like spicy apple .
